The pot roast workhorse. Outside round is a little firmer than its inside counterpart, which makes it perfect for slow, moist cooking that breaks it down into rich, sliceable beef.

Best for: Pot roast in the Dutch oven or slow cooker with broth and root vegetables. Or slow-roast to medium-rare and shave thin for sandwiches. Either way, slice against the grain.
